I had forgotten that today was St. Patrick’s day until hubby said he wanted corned beef. I hate cooking corned beef. He had bought this little package of corned beef that you just heat up in some water. I boiled a pot of water and put the bag of corned beef into it. He had bought a big head of cabbage the other day. It was so big that I could hardly cut it in half. I saved the other half to make some coleslaw tomorrow. I cut the cabbage in slices, it filled a whole pan. I chopped up an onion and cooked it in some butter and a little olive oil that is flavored with garlic. After the onion cooked, I put in the cabbage in the pot and about 2 cups of water. I would stir it once in a while and cooked it about 25 minutes. The corned beef was really good. The brand name of the company that made it is Harris. I think it was the best tasting corned beef that I have ever made. I will buy that again. It would be great on rye bread for a corned beef sandwich.
The other day was my husband’s birthday. We went to the Atlantis casino to go eat in one of the restaurants. It was a nice place to eat.

We ordered a pastrami sandwich. The waiter said it was a big sandwich, so my husband and I split it. I also had a cup of clam chowder. The clam chowder was so good, nice and creamy. I love a good cup of clam chowder. The restaurant had these beautiful bird of paradise flowers growing all around. (Click pictures to see bigger.) There was even a waterfall fountain. I told the waiter that it was my hubby’s birthday. After we ate, the waiter brought over a big piece of chocolate cake for my husband and said “Happy Birthday.” The cake was so good, it had chocolate poured all over it, like a shiny chocolate fudge sauce. The cake was part chocolate mousse and chocolate cake. It tasted so good. The waiter was so nice. I played two games of keno, didn’t win anything. After lunch, we went around the casino and hubby played craps and I played the slot machines. I won $40 and hubby won $20, so that more than paid for lunch.
