My hubby wanted to go to Costco this morning. It is cold and snowy outside. I put on my boots and down coat and got in the car. The roads were a little icy. We went slow and put our jeep in the snow gear. When we got there, they had just opened. I told him that I was really hungry so I would go get something to eat while he shopped.
I went and bought a hot chicken bake and went over to a table to eat it. They only sell lunch stuff, an egg burrito would have been nice but the chicken wrapped in this crispy bread was good. It warmed me up. Most of all the tables were empty. I took a picture to show you.
See, endless table space. While I was eating some guy came over and set his box of stuff that he just bought right beside me on the table top. I mean…right by me. He then left and came back and put something in the box. Then he went and got a hot dog and put it in the box. Then he said “I hope I am not crowding you.”……….Really, he hoped that. It is not like he didn’t have a choice of tables to put his stuff on. He then went and got a soda and put it in his box and then picked up the box and left.
Most of the time the tables are all full, but not this morning. I mean, the place he put his stuff was right beside me.
The other day we went to the grocery store. My husband saw something on TV and made me come upstairs to see it. Uggggh. I hate climbing the stairs to see what he is watching on TV. I went up there and he said “Sit down and watch this”. I sat down and it was about some guy serving meatballs in his restaurant. His customers were raving about how great they tasted. The guy said he takes ground beef and mixes them with some type of special bread crumbs and eggs and sugar, salt and pepper. Then he forms meatballs and deep fries them. Then he makes a brown gravy and puts the meatballs in the gravy and bakes them for 3 hours. Well I am not deep frying meatballs but I could make them and cook them but not in the oven for 3 hours. I looked up a Swiss meatball recipe with gravy. I decided to make them. We went to the store so I could get some meat and then I found the isle with egg noodles. I went down the isle when some man who was looking at something on the other side jumped in front of me and said “I was here first!” I didn’t even know what he was talking about. I was just walking by and the noodles were down the isle on the other. I guess he thought I was supposed to not walk by him or something. I didn’t say anything to him.
I did make the meatballs and they tasted really good. The next time I make them I will take pictures and post the recipe.
It snowed last night and today. It was really pretty last night. The snow was so bright so I took a picture. First snow this year.
I hate the banana muffins in the store with the fake banana taste. I was buying a mix to make banana bread, it calls for 2 bananas. It is OK but I decided to go pull out my banana muffin recipe in my recipe folder. In fact I am going to make some today. I let the bananas ripen till they look brown. That way they are soft and so sweet.
Here is the recipe:
1 cup white sugar, 1 egg, 2 cups all purpose flour, 1/2 teaspoon salt, 1/2 cup vegetable oil, 3 ripe bananas (Mashed), 1 teaspoon baking soda.
I cut up the bananas. I slice them down the center and then cut them up in slices, not too thick, then I mash them in a bowl with a potato masher.
Mix the sugar, oil and egg until creamy and light yellow. It is easier to do this with a mixer. I went to Walmart and bought a $14 mixer to mix it up with. We have a nicer mixer but that thing is heavy and the cheap one mixes great and is very light weight to hold while mixing. I wanted a cordless one but I could not find one cheap. I hate the cord hanging off the mixer. I do have a big mixer, one of the giant Kitchen Aide ones but I put it away because it takes up too much room on my counter. It is heavy too. I only get it out if I decide to make bread.
After I mix up the sugar, oil and egg I add the mashed up bananas.
Then I use the mixer to mix it all together. Add flour, baking soda and salt. Stir until completely smooth.
I use an ice cream scoop to put the batter into a jumbo muffin pan. Fill it about 3/4 full. It only makes 5 muffins. I spray the pan with oil spray first.
Bake for 20 minutes at 350 degrees F. Preheat your over before you start making the muffins. After 20 minutes I cover the muffins with foil, lightly put over the pan to keep them from getting too dark. I then cook them 8 more minutes. I live at a higher altitude so if you live at sea level watch them after 20 minutes and test them for being done with a toothpick.
They taste so good after you let them cool.

We went to Canyonlands in Utah. We wanted to drive down into the canyon and you can do that there but you have to have a 4 wheel drive vehicle. There are 2 parts of Canyonlands. First we went to the part by Moab, UT and then we went to the other side about 45 miles away. We drove down this dirt road there and stopped at a beautiful place surrounded by these mushroom shaped tall rocks. It surrounded us. We found a place to park and made our lunch and found a big rock to sit on and eat our sandwich. The sky was gray and it did start to rain toward the end of our lunch. It was so beautiful to sit there and feel the wind blow by and the little drops of rain hit our skin. It was wonderful. Such a great place, all alone eating our lunch on a rock. When we were done eating we packed up our stuff and left because the rain started to really come down.
We could not go far into the canyon on the south end because you need a permit to drive the road. You need a jeep to go further because they have giant rocks to drive over and quicksand you can get stuck in. I don’t think I would drive it even if I had the right vehicle to do that. On their website it says if you get stuck and need a tow, the cost is $1,000 just to have the tow truck come to you. We did go down the North side of the canyon by Moab. It was fun. I will have to write a post about that with pictures. It was beautiful too.
I told my son to go get the mail. We went outside and there were horses in the yard next door. Our yards are not very big and I don’t have grass so they were standing in the yard with grass. Chomping away. They don’t care if you are standing right there, taking pictures of them. It had been raining so they were all wet. One walked to the next yard over so I did not see it long. A woman was going to visit the person next door and she said “There are more horses down the street.” I said “The ground is all wet and I don’t have my shoes on.” I just stood there on the patio by my front door and took pictures. I didn’t want to go put on my shoes.
In the spirit of Halloween I made it a zombie horse on Picmonkey.
I made me look like a vampire.
There was a few wild horse across the street in a field tonight. It was getting dark so it was hard to get pictures of them.
The flash made their eyes glow.
I didn’t want to get too close because they would walk away.
I am always looking at clouds to see the shapes.
I noticed a cloud that was shaped like a C. Since my name starts with a C, I took the picture to see if the cloud did look like a C shape.
I think it does, not a perfect C but somewhat C shape.
I also wanted to share this picture of Mt. Olympus. I love how this one came out.
Virginia city is 14 miles from my house. You go over a mountain to get to it. My son wanted to go there to eat lunch and walk around the old town. It is like an old western town. They still mine silver and platinum and gold. There are a lot of old buildings and the sidewalks are made of wood and slope and twist and dip and are little hard to walk on. We walked the whole street looking for a place to eat. There are old saloons with long wood bars. We went into a few shops that sold stuff like old knives and little bottles of silver. I almost bought one but thought what would I do with it once I got home. My son wanted this old knife that had a little pistol mounted on it, it was dull and looked like a cap gun. The guy wanted $50 but I thought maybe $20 is all it was worth. It was one of those, this is neat but he would just put it in a drawer and never look at it again. We didn’t buy it. I wanted a t-shirt that showed a long bar with horses sitting on the bar stools and said Virginia City, but they didn’t have one in the store, just the window. I didn’t get a t-shirt.
We found a saloon with a menu out front so we went in to eat. They had a sign “See the suicide table.” It was this old poker table in the back, all worn out, under glass. The sign said 3 men commented suicide on that table after losing all they money. If you think about it, it is gross. I didn’t look at it long. The town was not very busy. It was a Tuesday and half of the businesses were closed. The food was good in the restaurant, saloon.
I had chicken fingers and my son had a clam chowder in a bread bowl and hubby had the most delicious meat ball sandwich. The 3 guys at the bar stood up and grabbed their canes. My husband heard them say “We can’t drink more, we have to drive home”, as they stumbled out the door.
We walked around the town after we ate. There is a saloon called Bucket of Blood. It is usually packed on the weekends, but it was empty when I looked in the door. It does have a neat name.
It was getting cold, that town is almost 7,000 feet. We drove home. You can see the mountains, covered with snow across the valley. That is where Lake Tahoe is, way up in the mountains. It is a steep, twisting, turn road to get back down the mountain.
I signed up for another painting. I love the Vincent Van Gogh painting Starry Night.
I looked on the class schedule for paintings they are going to teach. The place that I go to had the Starry Night painting. Well their version of it. It is pretty hard to paint in 3 hours. I think I might work on it at home a little more but I had to hurry along. The teacher painted it really fast, so there I am trying to mix the paint like her colors and by the time I do that she is almost done with her part so I am just splotching on paint as fast as I can but she is moving on to the next step and I am not done with the part she just showed……it is very stressful. I don’t think I will paint another picture there for a while.
Here it is though, I framed it because I used to live in Florida and I painted a lot of pictures and bought frames for them. I have a lot of frames. I might just repaint another one and take my time and do it better, not rushed. I may do it in oil. This is acrylic. I like oil because you can put more texture into painting.
When we ate at the Harrah’s buffet, my husband had a bowl of vegetable soup that they had. He said it was really good. He then went to the store and bought a few cans of vegetable soup. He said they were awful. It was just carrots that was mushy and green beans and corn. Yuck.
We looked at the menu on a few restaurants in town and they don’t have much choice for soups. While we were at the grocery store I said I would try to make a soup. A nice hot bowl of home made soup sounded great to me. I bought a big can on cut up tomatoes. I bought a jar of Better than Bouillon vegetable broth flavor. We bought a big yellow squash and a light green one. (I think it is called Mexican squash. It tastes a lot like the yellow squash.) 1 can of white beans.
I watched a Gordon Ramsey video where he made a vegetable soup with some butter beans, but it gave me an ideal of what I wanted to do to my soup.
Cut up an onion, I chopped it into cubes and then my chopper broke. I cut up 3 carrots into little cube shapes. Pour some olive oil in a big pot and then add the onion and carrots. I don’t like celery but Gordon chopped up some for his soup. I added some garlic salt and celery salt. Stir the onions and carrots over the heat until the onions get a little soft. Then put 1 spoon of tomato paste in it. Stir it around and let it cook for a little while to take out the bitter taste. Drain the can of beans and add the beans. (My husband said next time put more beans in so I will buy 2 cans.) I added about half a can of the cooked canned tomatoes with the juice.(The big can.)
I made the broth with 5 cups of water and 5 tsp of the Better than bouillon vegetable broth flavor into hot water. I also put 1 tsp of chicken stock flavor (same brand) into the water. Stir that up until it is all dissolved. Pour that into the pot. Stir it all up. I put a couple of shakes of the complete Badia seasoning into it. I love that stuff. You can order it on Amazon. That is where I got mine. My husband cut up the squash into bite size pieces.
Stir it all up and cook it a little under medium heat for 40 minutes. (Gordon says to take the froth off the top from the beans. The froth make it bitter he says.) I scooped up the froth I saw on the top and threw it away. Just cook it until the carrots are tinder. I added some salt and pepper at the end to taste.
It was so good. Hubby said it tastes better than the soup he ate at Harrah’s. It tastes so good that he told me to double the amount so he can save some to eat later. He spooned the left over soup into about 2 jars for later. I did take a picture of it when it was cooking.
I made a loaf of garlic bread and we had that with the soup. Yummy.
