Weekly photo challenge: Near and Far

The weekly photo challenge is Near and Far.

I was driving home this morning, after taking my son to school. There is this field with cows. I saw this black cow standing up on this hill or dirt. I turned the car around and parked and took the picture. When I came home and looked at what the photo challenge was “Near and Far”, I looked at the picture I had just taken and said this is a near and far picture.

All the other cows were at the bottom of the dirt hill. You can see the pretty mountains far away too.

Penne pasta Tuna Casserole

I typed this whole post and then it didn’t show up. I will type it again.

I made a Tuna Casserole and used whole wheat penne pasta. It tasted really good so I am posting how I made it.


I used half a box of whole wheat penne pasta. Boil it for 10 minutes and drain.

Preheat your oven to 400 degrees F.

2 6 oz cans albacore white tuna. drained.(I run it over and over water with the lid over it and then press out off the water. It tastes less fishy.)

1 can cream of chicken soup.

1 cup green peas. I used canned and drain off the liquid.

I made a white sauce : 1cup milk,2 tbsp flour and 2 tbsp butter. Whisk in the flour into the milk over medium heat on the stove in a small pan. Add the butter and whisk until the sauce thickens. I just add a little salt and pepper and then add the can of cream of chicken soup.)

2 cups cheddar cheese shreaded

1/4 cup chopped onion

1 cup crushed potato chips

In a large bowl, thoroughly mix the pasta, 1 cup of the cheddar cheese, peas, tuna, white sause with the soup and onions together.

Crush the potato chips. Put the bowl of ingredients into your casserole dish and then put the crushed potato chips all over the top. Put the other cup of shredded cheddar cheese over the whole top.

Bake for 20 mintues, or until cheese if bubbly.

Weekly photo challenge: Purple

The Weekly photo challenge is Purple.

The happens to go with what I did this week. I made pickled beet eggs. I love these eggs. It takes about 4 days to let them turn purple from the beets. My husband had this recipe from him mother. She always made pickled beets. Then when the beets were gone, they would put boiled eggs in the juice. We love them when we make beets. I went and bought a bundle of beets, 4 of them, and decided to make a single batch, just for the eggs.

This is right after I made the beet syrup with the beets. This is the eggs after 4 days. They turn a deep purple.








We love them.






Buy beets, I used 4 of them (they come 3 or 4 to a bundle in the store. I got one bundle of 4 small beets). Boil the beets, covered with water, for 90 minutes, or until fork tender. Put a tablespoon of vinegar in the water to make the beets darker.

For the syrup,

1 1/2 cup vinegar. (Use good vinegar like Heinz.)

1 cup water

1 1/4 cup sugar.

1 tsp allspice

1 cinnamon stick

1/2 tsp salt

12 cloves.

Combine vinegar, water, sugar, spices and salt, in a pan, (I used a 3 qt pan.) big enough to put the cooked beets in when they are done. Bring to a boil and simmer 15 minutes.

When the beets are done, pour out the water and rinse off and peel and cut up the beets. (Oh yeah, leave one inch when you cut off the leaves and don’t cut off the root piece when you first boil it. cut them off when the beet is all cooked.)

I take the cinnamon stick out of the syrup before I put the beets in.

Take your beets, all cut up, (I slice them into pieces.) Put them into the syrup that you have ready, and simmer them for 5 minutes. Put your boiled eggs into a jar and pour the beets and liquid over the eggs. Make sure you move them around each day so they all get coated. I used 14 eggs in my jar. (Be careful peeling the eggs, so you don’t damage them before you put them in the jar.) Eat them after 3 or 4 days in the beets.  Keep them in the refrigerator.  Enjoy your purple eggs.

Weekly photo challenge: Inside

The weekly photo challenge is Inside.

I thought about the Inside challenge, so I took my camera with me to the mail box. It is around the corner. Right in front of the mail box stand is this big orange wooden box. I have never looked inside. So I go up to it, camera ready to take the inside photo. I lift up the lid. I wonder why the big wooden box is there and what could be inside.





I click the picture.

Not much is inside. It is almost empty. I see a box that looks like a store donut box. An old burlap bag and something that looks like paper in plastic.

That was not very exciting.
So I go unlock my mailbox and look inside. I aim my camera at the inside of the box. There is a bunch of mail.

All bills, yuck.





I see the sliding door open on a house they are building on the corner. Lets go peek inside. I snap the picture.




There is not much in there. No wonder they left the door open.

Weekly photo challenge: fleeting moment

The Weekly photo challenge is Fleeting Moment.

I was sitting in my room, reading a book. I heard voices outside. I got up and looked out the window. A house pad, all concrete was poured the day before. It was 6:30 PM and there were no workers around. I saw 2 boys, about 14 years old, skating on their skateboards all over the new concrete, that will be someones house. I got up and went downstairs and opened the garage door. I went out to tell the boys that they should not be marking up the contrete. They were gone. In that “Fleeting Moment” they had their fun and marked up the concrete for a house. Most of the marks were dug into the garage floor area. I would be mad if that was my garage floor. I am sure that the people that bought that house will not be happy when they see it. The builder will probably have to fix this “fun time” the kids had.

Weekly photo challenge: Close

The weekly photo challenge is Close.

I am close to reaching the 3rd shelf in my cabients. I have to get a step ladder to reach the 3rd and 4th shelf.

I was unpacking my figurines today. My Lady and the Tramp figurine that I got at Disneyland many years ago, was broken. I bought some super glue and glued it back together. It is “close” to being what it was before it was broken. I hate to throw it away. It broke in two pieces at the base of the table. The glue held it back together.


I still have a few move boxes to unpack. The whole garage was full of the boxes that we packed. It hurts to lug those upstairs. I am sore all over. My knees are screaming when I carry something heavy upstairs. Last week I put out some boxes full of boxes and the garbage truck came and picked up the trash. The garbage man told me that he would take what I put out, but the next time I had to flatten them and bundle them up and tie them. My husband gave the guy a $20 bill for taking what we had. (We put out a lot of stuff.)

Today was trash day. The big green “sanitation” truck came by across the street. It has this arm on it that goes out and clamps the trash can and lifts it up and turns it over and dumps out the trash into this box. The box then goes up and turns over and dumps out the trash into the truck. If you have extra bags, then a guy gets out of the truck and throws extra trash into the box thing.

I spent last night getting the boxes nice and neat and put in a bundle and tied them together. We got them to the curb. We went to Home Depot this morning and bought blinds for the windows upstairs. When we came back home the trash was empty but the boxes that I put out were still there. I called the trash company. They said the guy would not pick up the boxes because it was too big and heavy. They told me to make it that big in the first place.

I was told to pack it up smaller. I called back and I can take the boxes to the recycle center and they will take cardboard. They should have told me that in the first place. We put them in the back of our pickup and will take them tomorrow. I will take a picture of the place.

Another thing I am peeved about is Home Depot. I bought a washer and gas dryer the day I closed on my house. We had to wait 8 days to have it delivered. The delivery guys showed up and started putting it in my house. I asked them if they hooked the dryer up to the gas line. “No, this drier is electric.” I didn’t buy an electric dryer. They took everything back to the store. They said I had to reject everything and just get another set. I went to the store and they cancelled that order and then ordered another washer and the gas dryer. They said I would get it delivered in 8 more days. It was supposed to be next Thursday. Today they called me and said the stuff is on back order and it will be delivered on Saturday. I should have gotten the washer and dryer from RC Wiley. I got my refrigerator from them and it was delivered in 2 days. I just get a lot of run around from Home Depot. RC Wiley is this big furniture and appliance store here. I got my couches and fridge and my husband got a nice wood headboard for his bed, all delivered in 2 days. I bought the washer and dryer from Home Depot first and then bought the other stuff at the other store. I will never go to Home Depot to buy appliances again. I did go there today and got window coverings and they are nice. But I didn’t have to have those delivered.

I will put up more pictures when I am all done unpacking and putting away stuff. It seems like that will take a long time. There is so much to do.
